Baked French Toast
1 C brown sugar
½ C butter, melted
3 tsp ground cinnamon, divided
3 cooking apples, peeled, cored and sliced thinly
½ C dried cranberries
1 loaf Italian bread, cut into 1" thick slices
6 large eggs
1 ½ C milk
1 T vanilla extract
 
Combine brown sugar, butter and 1 tsp cinnamon.  Stir in apple slices.  Spread mixture evenly over bottom of 13 x 9 baking dish.  Arrange slices of bread on top.
Mix eggs, milk, vanilla and remaining 2 tsp cinnamon until blended.  Pour mixture over bread soaking bread completely.  Cover and refrigerate overnight.
Bake covered with aluminum foil, in a preheated 375 F oven for 40 minutes.  Uncover and bake 5 minutes longer.  Remove from oven; let stand 5 minutes.  Makes 12 servings.
