Bob's Favorite Meatloaf

1 lb. Ground Beef
1 egg
1/2 Cup diced onion
1/2 Cup cracker crumbs
1 small can evaporated milk
1 T mayonnaise (make it heaping)
Salt and pepper to taste
Preheat oven to 350°.
Mix ingredients together. Put into loaf pan loosely, do not pack down. Bake for one hour and let stand 10 minutes before serving.
Serves 3-4
My notes:
  • I usually double the recipe because I love leftover meatloaf sandwiches (cheese and mustard on whole wheat, please).
  • When doubled, I use more like 1/3-1/2 C of mayonnaise.
  • Last but not least, I add 3 or 4 T of Worchestershire sauce and 2 T of hot sauce. Be as brave as you wish!
  • When doubled, I use a large round casserole dish.  Cooking time should be extended 15-30 minutes. You can also make two loaf pans.
Easy Gravy
1 T Butter
1 T flour or cornstarch
1 envelope of G.Washington Seasoning
1 C water
Melt butter in saucepan.  Mix together flour and seasoning and add water, stirring together until well mixed.  Pour liquid into saucepan with butter and stir until thick.  Let cook for a minute over low heat.  This is enough for the above recipe, again I usually will double it.
