Two Layer Key Lime Pie
3/4 cup granola (with no raisins or fruit), grind
3/4 cup crushed graham crackers
1/4 cup melted butter
3 tbsp. sugar
Mix together, press into the bottom of a spring form or pie pan, bake at 350 degrees for 8 minutes.
Baked layer:
14 oz. can condensed milk
1/2 cup key lime juice
3 large egg yolks
Wisk all ingredients, pour into pan and bake at 300 degrees for 25 minutes; cool
Chilled layer:
8 oz. cream cheese, softened
1/2 cup condensed milk
1/4 cup key lime juice
2 tbsp. sugar
1 tsp. vanilla
Beat all ingredients. Pour over cooled baked layer and chill for 4 hours.
Cook's Notes: I use all graham crackers because I never have granola. Also, the last time I made this, I doubled the chilled layer to make the pie a little higher (also, I was able to use the entire can of condensed milk instead of just half.)
