SPAGHETTI SQUASH ALFREDO
 
1 large spaghetti squash
salt, pepper to taste
 
1 pt. heavy cream
1/2 cup. chicken stock
nutmeg
 
Cut spaghetti squash in half lengthwise, remove seeds and pulp, sprinkle w/salt and pepper and bake on cookie sheet until tender (350 degrees, approx. 30-45 minutes).  Remove from oven and cool.  Using a folk, separate strands by running the folk from stem to stem.  Set aside.
 
In pan, heat heavy cream and stock.  Add nutmeg, salt and pepper to taste.  Add squash.  Heat, Enjoy!
